Caramelized Onion And Roasted Red-pepper Tart Recipe

Ingredients
  • 3/4 c warm water (100° to 110°)
  • 3 large red bell peppers
  •  Topping:
  • 1 tbsp sliced fresh thyme
  • 1/4 c whole wheat flour
  • 1 package dry yeast (about 2 1/4 tsps)
  • 1 tbsp olive oil
  • 1 tsp honey
  •  Cooking spray
  • 1 tsp sea salt
  •  Crust:
  • 1 tbsp olive oil
  • 1/4 tsp freshly ground black pepper
  • 1 1/2 c bread flour, divided
  • 2 bay leaves
  • 1 tsp sea salt
  •  Thyme sprigs (optional)
  • 3 garlic cloves, minced
  • 3 thyme sprigs
  • 6 c vertically sliced onion

Directions
  • Step #1 To prepare crust, dissolve yeast & honey in warm water In a large-ish bowl; let this stand for 5 mins.
  • Step #2 Lightly spoon flours into dry measuring c, & level with a knife.
  • Step #3 Stir 1 c bread flour & 1 tbsp oil into yeast mixture.
  • Step #4 Cover up & let rise in a warm place (85°), free from drafts, 1 1/2 hrs or until bubbly.
  • Step #5 Stir in 1/2 c bread flour, whole wheat flour, & 1 tsp salt.
  • Step #6 Turn dough out onto a floured surface.
  • Step #7 Knead until smooth & elastic (about 10 mins); dough will feel tacky.
  • Step #8 Place dough In a large-ish bowl coated with cooking spray, turning to coat top.
  • Step #9 Cover up & let rise in a warm place (85°), free from drafts, for 1 hr or until doubled in size.
  • Step #10 (Press two fingers into the dough.
  • Step #11 If indentation remains, the dough has risen enough.
  • Step #12 ) Punch dough down; cover & let rest 10 mins.
  • Step #13 To prepare the topping, heat 1 tbsp oil in a 12-inch nonstick skillet coated with cooking spray over medium-high heat.
  • Step #14 Add onion, & cook for 5 mins, stirring frequently.
  • Step #15 Stir in 1 tsp salt, thyme sprigs, & bay leaves; cook for 15 mins or until deep golden brown, garlic, stirring frequently.
  • Step #16 Remove from heat.
  • Step #17 Discard thyme sprigs & bay leaves.
  • Step #18 Prepare broiler.
  • Step #19 While onion is cooking, cut bell peppers in half lengthwise, discarding seeds & membranes.
  • Step #20 Place the pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #21 Broil for 15 mins or until blackened.
  • Step #22 Place in a zip-top plastic bag, & seal.
  • Step #23 Let stand for 15 mins.
  • Step #24 Peel & coarsely chop.
  • Step #25 Preheat oven to 425°.
  • Step #26 Roll the dough into a 12 x 8-inch rectangle.
  • Step #27 Place the dough on a baking sheet coated with cooking spray.
  • Step #28 Top with the onion mixture & the sliced bell pepper.
  • Step #29 Sprinkle top with black pepper.
  • Step #30 Bake at 425° for 25 mins or until the crust is golden brown.
  • Step #31 Cool slightly.
  • Step #32 Sprinkle top with sliced thyme.
  • Step #33 Cut into 8 squares, & cut each square in half diagonally.
  • Step #34 Garnish with thyme sprigs, if desired.
