Peach Compote With Rum Recipe

Ingredients
  • 1/2 c water
  • 1 tbsp fresh lime juice
  • 1/4 c sugar
  • 1 c seedless red grapes, halved
  •  Mint sprigs (optional)
  • 1/2 tsp grated lime rind
  • 3 tbsps white rum
  • 3 c sliced peeled peaches (about 1 1/2 lbs)
  • 1 c fresh raspberries

Directions
  • Step #1 Combine water & sugar in a small saucepan.
  • Step #2 Bring to a boil, & cook for 30 seconds or until sugar dissolves, stirring constantly.
  • Step #3 Remove from heat, lime rind, & stir in the rum, & lime juice.
  • Step #4 Cool to about room temp.
  • Step #5 Combine peaches, grapes, & raspberries In a large-ish bowl.
  • Step #6 Add the rum mixture, tossing to coat.
  • Step #7 Garnish with mint sprigs, if desired.
