Blueberry Streusel Cake Recipe

Ingredients
  • 1 tbsp margarine, melted
  • 3/4 c plain low-fat yogurt
  • 1/3 c granulated sugar
  • 1 tsp hot water
  • 1 1/2 c all-purpose flour
  • 1/3 c vanilla wafer crumbs (about 8 cookies)
  • 1 large egg white
  • 1/4 tsp baking soda
  •  Cooking spray
  • 1 1/2 c blueberries
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1 large egg
  • 3/4 tsp baking powder
  • 1/4 c packed brown sugar
  • 3 tbsps vegetable oil
  • 1/4 c granulated sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine blueberries & 1/4 c sugar in a bowl; carefully mash with a potato masher until blueberries are crushed.
  • Step #3 Let stand 5 mins.
  • Step #4 Set aside.
  • Step #5 Combine wafer crumbs, margarine, brown sugar, & hot water; stir until well-mixed.
  • Step #6 Set aside.
  • Step #7 Combine flour, 1/3 c sugar, baking powder, baking soda, & salt In a large-ish bowl.
  • Step #8 Combine yogurt, egg, oil, vanilla, & egg white; stir well with a whisk.
  • Step #9 Add to flour mixture, stirring until well-mixed.
  • Step #10 Fold in blueberry mixture.
  • Step #11 Pour batter into a 9-inch round cake pan coated with cooking spray.
  • Step #12 Bake at 350° for 30 mins.
  • Step #13 Sprinkle top brown sugar mixture over cake; bake an extra 10 mins or until a wooden pick inserted in center comes out clean.
  • Step #14 Let cool on a wire rack.
