Cheesy Bacon-and-ham Casserole Recipe

Ingredients
  • 1/2 tsp freshly ground pepper
  • 1/2 lb bacon
  • 3/4 c quick-cooking grits
  • 2 tsps baking powder
  • 6 large eggs, lightly beaten
  • 1/2 lb sliced cooked ham
  • 1/2 c milk
  • 1 (16-oz) loaf prepared pasteurized cheese product, cubed
  • 1/4 c butter or margarine

Directions
  • Step #1 Cook bacon In a large-ish skillet until crisp; remove bacon, & drain on paper towels, reserving 1 tbsp drippings in skillet.
  • Step #2 Crumble bacon, & set aside.
  • Step #3 Cook ham in reserved drippings in skillet over med-heat/flame until browned.
  • Step #4 Cook grits according to package directions.
  • Step #5 Remove from heat; stir in the cheese & butter until melted.
  • Step #6 Stir in bacon, ham, eggs, & remaining ingredients.
  • Step #7 Pour into a lightly greased 13- x 9-inch baking dish.
  • Step #8 Bake at 350° for 45 mins or until set.
  • Step #9 NOTE: Casserole may be prepared a day ahead; cover & chill in the fridge.
  • Step #10 Remove from refrigerator the following day, & let this stand at about room temp 30 mins.
  • Step #11 Bake as directed.
