Black Walnut French Toast Recipe

Ingredients
  • 1/8 tsp ground nutmeg
  • 2 tbsps sliced black walnuts*
  • 1 large ripe banana, sliced
  • 2 large eggs, lightly beaten
  • 8 (0.8-oz.) white bread slices
  •  Vegetable cooking spray
  • 1/4 c fat-free milk
  • 1/4 c reduced-calorie maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 c honey
  • 1 tbsp light butter

Directions
  • Step #1 Place a small skillet over medium-high heat until hot; add 2 Tbsp.
  • Step #2 sliced black walnuts, & cook, stirring constantly, 5 mins or until toasted.
  • Step #3 Remove from skillet.
  • Step #4 Melt 1 Tbsp.
  • Step #5 light butter in small skillet over med-heat/flame; add banana slices, & cook 3 mins or until thoroughly heated.
  • Step #6 Stir in toasted black walnuts & 1/4 c honey, & remove this from heat.
  • Step #7 Whisk together eggs & next 3 ingredients in a shallow dish or pieplate.
  • Step #8 Lightly press bread slices, into egg mixture, 1 at a time, coating both sides of bread.
  • Step #9 Cook bread, in batches, on a nonstick griddle coated with cooking spray over med-heat/flame 1 to 2 mins on each side or until done.
  • Step #10 Repeat procedure, if necessary.
  • Step #11 Transfer to a serving plate.
  • Step #12 Serve with banana mixture & syrup.
  • Step #13 *Chopped pecans or traditional walnuts may be substituted.
