Mexican-style Eggs Recipe

Ingredients
  • 1 10-oz can of red enchilada sauce or one 16-oz jar salsa
  •  2 to 4 eggs (1 to 2 per person)
  • 4 6-inch corn tortillas
  • 1 16-oz can of refried beans or one 15-oz can pinto or black beans

Directions
  • Step #1 Heat oven to 250° F.
  • Step #2 Wrap the tortillas in foil wrap & place this in oven.
  • Step #3 In a saucepan, over medium-low heat, heat the beans.
  • Step #4 In a large skillet, over med-heat/flame, bring the enchilada sauce or salsa to a simmer.
  • Step #5 Break the eggs into skillet.
  • Step #6 For runny yolks, leave the tops of the eggs uncovered; for firm yolks, spoon some of the sauce over the top.
  • Step #7 Cover up, reduce heat, & let simmer for 5 to 7 mins.
  • Step #8 Top each tortilla with some of the beans, sauce or salsa, Cheddar, eggs, salt, scallions (if using), & pepper.
