Gingered Carrot Scones Recipe

Ingredients
  • 1 1/2 tsps orange zest
  • 1 tsp vanilla extract
  • 3/4 c plus 1 tbsp buttermilk
  • 3/4 c old-fashioned oats
  • 1/2 c cold butter, cut into small pieces
  • 1 egg white beaten with 2 tsps cold water (egg wash)
  • 1 large egg
  • 1 1/2 c all-purpose flour
  • 1 c finely grated carrot (about 1 1/2 carrots)
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 2 tbsps sliced crystallized ginger or 1 tsp ground ginger
  • 1/3 c sugar plus 1 tbsp, divided

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Mix together first 5 ingredients & 1/3 c sugar.
  • Step #3 Add butter, & process in food processor/blender until mixture resembles coarse meal.
  • Step #4 Add carrot & ginger, & pulse just until mixed.
  • Step #5 Whisk together egg, buttermilk, & vanilla in a separate bowl until mixed.
  • Step #6 Add to flour mixture, & pulse just until mixed & slightly moist.
  • Step #7 (Dough will be sticky.
  • Step #8 ) Transfer dough to a well-floured surface with well-floured hands.
  • Step #9 Divide in half, & pat each half into a 3/4-inch-thick circle.
  • Step #10 With a floured knife, cut each circle into 6 wedges.
  • Step #11 Place wedges on a lightly greased baking sheet.
  • Step #12 Brush top of each scone with egg wash, & sprinkle each with 1/4 tsp sugar.
  • Step #13 Bake at 425° for 15 mins or until golden.
  • Step #14 Serve warm, or let cool completely, & store up to 2 days in an airtight container at about room temp.
