Grits With Sausage Recipe

Ingredients
  • 1 tsp salt
  • 1 (16-oz) package reduced-fat ground pork sausage
  • 1/2 c cornmeal
  • 1 c uncooked regular grits
  • 4 1/2 c water
  • 1/2 tsp pepper
  • Toppings: shredded Cheddar cheese, salsa

Directions
  • Step #1 Cook sausage in a skillet over medium-high heat, stirring until it crumbles & is no longer pink; drain.
  • Step #2 Bring 4 1/2 c water & salt to a boil In a large-ish saucepan; add grits.
  • Step #3 Cover up, stirring every once in awhile, reduce heat, & let simmer, 10 mins.
  • Step #4 Stir in sausage, stirring every once in awhile, cornmeal, & pepper; cook, 5 mins.
  • Step #5 Spoon into a foil wrap-lined 9- x 5-inch loafpan; chill 8 hrs.
  • Step #6 Remove loaf from pan; cut crosswise into 1/2-inch-thick slices.
  • Step #7 Cook slices, in batches, in a skillet coated with cooking spray over medium-high heat 5 mins on each side or until browned.
  • Step #8 Serve with desired toppings.
  • Step #9 NOTE: For testing puposes only, we used Smithfield 40% Lower Fat Sausage.
