Frittata With Black Beans And Salsa Recipe

Ingredients
  • 1/2 tsp ground cumin
  • 1/4 c sliced green onions
  • 1 c sliced tomato
  • 3 large eggs, lightly beaten
  • 1 1/2 tbsps fresh lime juice
  •  Salsa:
  • 1 jalapeño pepper, seeded & minced
  • 1 (15-oz) can black beans, drained
  • 1 garlic clove, minced
  • 1/3 c sliced fresh cilantro
  • 1/2 c (2 oz) shredded reduced-fat Monterey Jack cheese with jalapeño peppers
  • 3 oz baked tortilla chips (about 3 c), coarsely crushed
  •  Dash of salt
  • 4 large egg whites, lightly beaten
  • 2 tsps vegetable oil
  •  Frittata:

Directions
  • Step #1 To prepare salsa, mix first 6 ingredients in a bowl.
  • Step #2 Cover up & marinate in refrigerator 30 mins.
  • Step #3 Preheat broiler.
  • Step #4 To prepare frittata, heat oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #5 Add onions & chips; sauté 2 mins.
  • Step #6 Remove from heat.
  • Step #7 Combine egg whites, eggs, & beans; pour this into skillet.
  • Step #8 Sprinkle top with cumin.
  • Step #9 Wrap handle of skillet with foil wrap; place skillet in oven.
  • Step #10 Broil 2 1/2 mins or until center is set.
  • Step #11 Sprinkle top with cheese.
  • Step #12 Broil 20 seconds or until cheese melts.
  • Step #13 Cut into wedges; serve this with salsa.
