Eggs Oso Grande Recipe

Ingredients
  • 6 bacon slices, cooked & crumbled
  • 3 ripe plum tomatoes
  • 1 (9-oz) package frozen creamed spinach
  • 2 tbsps grated Parmesan cheese
  • 1/2 tsp dried basil
  • 2 tbsps butter or margarine, cut up
  • 4 large eggs
  • 1/4 tsp pepper
  • 2 English muffins, split & toasted
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  •  Freshly grated Parmesan cheese

Directions
  • Step #1 Cook spinach according to package directions; keep warm.
  • Step #2 Cut tomatoes into 1/4-inch-thick slices; place this in a 15- x 10-inch jellyroll pan.
  • Step #3 Sprinkle top with oregano & basil; dot with butter, & sprinkle with 2 tbsps Parmesan cheese.
  • Step #4 Broil tomato slices 6 inches from heat (with electric oven door partially open) 2 mins.
  • Step #5 Bring 2 inches of water to a boil In a large-ish saucepan; reduce heat to maintain a light simmer.
  • Step #6 Break eggs, 1 at a time, into water, into a saucer; slip eggs, 1 at a time, holding saucer close to surface of water.
  • Step #7 Simmer 5 mins or until done.
  • Step #8 Remove with a slotted spoon, & trim edges, if desired.
  • Step #9 Top muffin halves evenly with tomato slices.
  • Step #10 Place a poached egg over tomato slices, & sprinkle evenly with salt & pepper.
  • Step #11 Top with creamed spinach, & sprinkle with freshly grated Parmesan cheese.
  • Step #12 Top with bacon, & serve as soon as possible.
