Step #1 In a shallow dish, mix together olive oil, cumin, sliced cilantro, & lime juice.
Step #2 Spice up with salt & pepper.
Step #3 Add chicken, & mix well.
Step #4 Cover, & put in the fridge for at least one hr.
Step #5 Preheat grill for high heat.
Step #6 Thread chicken, onion, red bell pepper, zucchini, & tomatoes onto skewers.
Step #7 Brush grill with oil, & arrange skewers on hot grate.
Step #8 Cook for approximately 10 mins, or until chicken is cooked through, turning to cook evenly.
