Chicken Kabobs Mexicana Recipe

Ingredients
  • 1 small zucchini, cut into 1/2-inch slices
  • 2 tbsps sliced fresh cilantro
  • 1 tsp ground cumin
  • 1 onion, cut into wedges & separated
  • 1 red bell pepper, cut into 1 inch pieces
  • 2 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 10 cherry tomatoes
  • salt & ground black pepper to taste
  • 2 tbsps olive oil
  • 1 lime, juiced

Directions
  • Step #1 In a shallow dish, mix together olive oil, cumin, sliced cilantro, & lime juice.
  • Step #2 Spice up with salt & pepper.
  • Step #3 Add chicken, & mix well.
  • Step #4 Cover, & put in the fridge for at least one hr.
  • Step #5 Preheat grill for high heat.
  • Step #6 Thread chicken, onion, red bell pepper, zucchini, & tomatoes onto skewers.
  • Step #7 Brush grill with oil, & arrange skewers on hot grate.
  • Step #8 Cook for approximately 10 mins, or until chicken is cooked through, turning to cook evenly.
