Cinnamon-apple Cake Recipe

Ingredients
  • 2 tsps ground cinnamon
  • 1 1/2 tsps baking powder
  • 1 3/4 c sugar, divided
  • 2 large eggs
  •  Cooking spray
  • 6 oz block-style fat-free cream cheese, softened (about 3/4 c)
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 1/2 c all-purpose flour
  • 3 c sliced peeled Rome apple (about 2 large)
  • 1/2 c stick margarine, softened

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Beat 1 1/2 c sugar, vanilla, margarine, & cream cheese at medium speed of a mixer until well-mixed (about 4 mins).
  • Step #3 Add eggs, 1 at a time, beating well after each addition.
  • Step #4 Combine flour, baking powder, & salt.
  • Step #5 Add flour mixture to creamed mixture, beating at lowish speed until mixed.
  • Step #6 Combine 1/4 c sugar & cinnamon.
  • Step #7 Combine 2 tbsps cinnamon mixture & apple in a bowl, & stir apple mixture into batter.
  • Step #8 Pour batter into an 8-inch springform pan coated with cooking spray, & sprinkle with remaining cinnamon mixture.
  • Step #9 Bake at 350° for 1 hr & 15 mins or until the cake pulls away from the sides of the pan.
  • Step #10 Cool the cake completely on a wire rack, & cut using a serrated knife.
  • Step #11 Note: You can also make this cake in a 9-inch square cake pan or a 9-inch springform pan; just reduce the cooking time by 5 mins.
