Peach French Toast Recipe

Ingredients
  • 2 tbsps plus 3/4 c heavy cream
  • 4 tbsps unsalted butter
  • 3 large eggs
  • 2 tbsps light brown sugar
  • 1/8 tsp ground cinnamon
  • 8 slices white or sourdough bread or brioche
  •  Confectioners' sugar
  • 2 ripe yellow peaches, cut into 1/2-inch pieces

Directions
  • Step #1 In a large skillet, over medium-low heat, melt 2 tbsps of the butter until it foams.
  • Step #2 Add the brown sugar & stir for 30 seconds.
  • Step #3 Add the peaches, & cook, raise heat to medium-high, stirring frequently, for 3 mins.
  • Step #4 Stir in 2 tbsps of the cream & let simmer for 2 mins.
  • Step #5 Transfer to a bowl.
  • Step #6 Heat oven to 200° F.
  • Step #7 Place 4 slices of the bread on a cutting board.
  • Step #8 Divide the peach mixture evenly among the slices, leaving a 1/2-inch border on all sides.
  • Step #9 Top with another slice of bread & press carefully.
  • Step #10 In a shallow bowl, beat the eggs & cinnamon.
  • Step #11 Working in batches, soak the sandwiches in the egg mixture for 2 mins per side.
  • Step #12 Melt 1 tbsp of the butter In a large-ish skillet over med-heat/flame.
  • Step #13 Fry 2 sandwiches until golden brown, 3 to 4 mins per side.
  • Step #14 Transfer to a baking sheet & place this in oven to keep warm.
  • Step #15 Repeat with the remaining butter & sandwiches.
  • Step #16 Beat the remaining cream until soft peaks form.
  • Step #17 Halve each sandwich on the diagonal, sprinkle with the confectioners' sugar, & serve this with the whipped cream.
  • Step #18 Tip: If you're using day-old bread to make the French toast, trim the crusts, which may have become tough.
