Soft Scrambled Eggs With Herbs And Shaved Truffles Recipe

Ingredients
  • 1 tbsp unsalted butter
  •  Salt & freshly ground pepper
  • 1 tbsp finely sliced flat-leaf parsley
  • 1 tbsp snipped chives
  •  Buttered brioche toast, for serving
  • 6 large eggs, beaten
  • 1 small fresh truffle

Directions
  • Step #1 Melt the butter In a large-ish nonstick skillet.
  • Step #2 Add the eggs & season this with salt & pepper.
  • Step #3 Cook over moderate heat, until the eggs are creamy, with large, stirring carefully with a wooden spoon, soft curds, about 4 mins.
  • Step #4 Stir in the chives & parsley & spoon the scrambled eggs onto warmed plates.
  • Step #5 Thinly shave the truffle all over the scrambled eggs & serve right away with the buttered brioche toast.
