Apricot-bran Honey Cakes Recipe

Ingredients
  • 1 large egg white
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 c packed brown sugar
  • 6 tbsps butter
  • 3/4 c oat bran
  • 2 tbsps honey
  •  Cooking spray
  • 1 1/2 c sliced dried apricots (about 7 oz)
  • 1/3 c apricot nectar
  • 1/2 tsp salt
  • 3/4 c all-purpose flour (about 3 1/3 oz)
  • 1 large egg
  • 1 (8-oz) carton plain fat-free yogurt

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 4 ingredients in a small saucepan; place over high heat.
  • Step #3 Bring to a boil; reduce heat, & let simmer 3 mins or until apricots are plump.
  • Step #4 Remove from heat; cool.
  • Step #5 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #6 Combine flour, bran, baking soda, & salt in a medium bowl; stir well with a whisk.
  • Step #7 Make a well in center of mixture.
  • Step #8 Combine brown sugar & next 4 ingredients (through egg white) in a small bowl; stir well with a whisk.
  • Step #9 Add sugar mixture to flour mixture, stirring just until mixd.
  • Step #10 Gently fold in apricot mixture.
  • Step #11 Spoon 1/2 c batter into each of 7 (6-oz) ramekins coated with cooking spray.
  • Step #12 Place ramekins on a jelly-roll pan.
  • Step #13 Bake at 400° for 15 mins or until golden brown.
  • Step #14 Place on a wire rack.
  • Step #15 Serve warm or at about room temp.
