Spanish Omelets Recipe

Ingredients
  • 4 large eggs
  • 1/2 c sliced onion
  • 1 garlic clove, minced
  • 1 tbsp minced fresh or 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 c sliced pitted manzanilla (or green) olives
  • 1/2 tsp olive oil, divided
  • 1 1/2 c sliced potato
  • 8 large egg whites
  • 1/8 tsp pepper
  • 1/2 c sliced red bell pepper
  • 1/2 c (2 oz) shredded part-skim mozzarella cheese
  •  Cooking spray

Directions
  • Step #1 Place potato in a saucepan; cover with water.
  • Step #2 Bring to a boil; reduce heat, & let simmer 15 mins or until tender; drain.
  • Step #3 Cool, dice, & set aside.
  • Step #4 Heat a medium nonstick skillet over med-heat/flame.
  • Step #5 Add onion, bell pepper, & garlic; sauté 8 mins.
  • Step #6 Add potato, olives, & oregano; cook 1 min or until thoroughly heated.
  • Step #7 Remove from heat; stir in the cheese.
  • Step #8 Set aside.
  • Step #9 Combine egg whites, eggs, salt, & pepper in a bowl; stir well with a whisk.
  • Step #10 Heat 1/4 tsp olive oil in a small nonstick skillet coated with cooking spray over medium-high heat.
  • Step #11 Add half of egg mixture to skillet.
  • Step #12 Carefully lift edges of omelet with a spatula; allow uncooked portion to flow underneath cooked portion.
  • Step #13 Cook 3 mins; flip omelet.
  • Step #14 Spoon 1 c potato mixture onto half of omelet.
  • Step #15 Carefully loosen with a spatula; fold in half.
  • Step #16 Cook an extra min on each side.
  • Step #17 Slide onto a plate.
  • Step #18 Repeat procedure with 1/4 tsp olive oil, egg mixture, cooking spray, & potato mixture.
  • Step #19 Note: Substitute 2 c egg substitute for 8 egg whites & 4 eggs, if desired.
