Mint Bellinis Recipe

Ingredients
  •  Garnish: lemon slices
  • 1 (750-milliliter) bottle Champagne or 2 1/2 c sparkling water
  • 2 c sugar
  • 1 lemon, halved
  • 4 (12-oz) cans peach nectar
  • 1/4 c firmly packed fresh mint leaves

Directions
  • Step #1 Bring first 4 ingredients to a boil, & cook 20 mins.
  • Step #2 Cool.
  • Step #3 Remove & discard lemon & mint; store mixture in an airtight container in refrigerator until ready to serve.
  • Step #4 Stir in Champagne before serving.
  • Step #5 Serve over ice; garnish, if desired.
  • Step #6 Prep: 10 min.
  • Step #7 , Cook: 20 min.
