Spiced Squash Butter Recipe

Ingredients
  • 3 medium acorn or other winter squash (about 3 lbs)
  • 1/4 tsp ground ginger
  • 1/2 c thawed apple juice concentrate, undiluted
  • 1/8 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3/4 c packed brown sugar

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Cut squash in half lengthwise; discard seeds & stringy pulp.
  • Step #3 Place squash, cut sides down, in a jelly-roll pan.
  • Step #4 Cover up & bake this at 400° for 1 hr or until tender.
  • Step #5 Cool.
  • Step #6 Scoop out pulp to equal 3 c.
  • Step #7 Place pulp in a mixer or food processor/blender; process until smooth.
  • Step #8 Combine pureed squash, apple juice, & the remaining ingredients In a large-ish saucepan or Dutch oven; bring to a boil.
  • Step #9 Reduce heat, uncovered, & let simmer, 45 mins or until thick, stirring frequently.
  • Step #10 Cool.
  • Step #11 Store in an airtight container in the refrigerator up to 2 months.
