Buttermilk-cheese Scones Recipe

Ingredients
  • 3 c all-purpose flour
  • 1 1/4 c buttermilk
  • 1 tsp hot pepper flakes
  • 1 tsp baking powder
  • 1/2 c grated Parmesan
  • 1 tbsp fresh sliced thyme
  • 3 tbsps cold unsalted butter, cut into small pieces
  • 1 c shredded Gruyère or Swiss cheese

Directions
  • Step #1 Heat oven to 400º F.
  • Step #2 Lightly coat a baking sheet with vegetable cooking spray.
  • Step #3 In a food processor/blender, mix the flour, baking powder, & butter & pulse until the mixture resembles coarse breadcrumbs.
  • Step #4 Transfer to a large bowl & add the 2 cheeses, hot pepper flakes, thyme, & buttermilk.
  • Step #5 Stir until the mixture sticks together.
  • Step #6 (It will be slightly crumbly.
  • Step #7 )Transfer the dough to a work surface & knead carefully until it comes together, about 30 seconds.
  • Step #8 Shape the dough to form an even, flat round about 1 inch thick.
  • Step #9 Cut the dough into 12 wedges.
  • Step #10 Place them about 2 inches apart on the baking sheet.
  • Step #11 Bake until the scones are light golden brown, 18 to 20 mins.
  • Step #12 Remove with a metal spatula.
  • Step #13 These are best served fresh but can be made up to 2 days ahead.
  • Step #14 Wrap in foil wrap & reheat in a 250º F oven for 10 mins.
  • Step #15 Store in an airtight container.
