Blue Corn-blueberry Muffins Recipe

Ingredients
  • 1 1/4 c buttermilk
  • 1/2 c granulated sugar
  • 1 c all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 large eggs, lightly beaten
  • 1 c fresh blueberries
  • 1/2 c unsalted butter, melted & cooled
  • 2 1/2 tbsps pearl sugar (optional; see Notes)
  • 1/2 tsp salt
  • 1 c blue cornmeal

Directions
  • Step #1 Preheat oven to 400º & generously grease 12 muffin c (1/2-c capacity).
  • Step #2 Sift cornmeal, baking soda, granulated sugar, baking powder, flour, & salt into a medium bowl.
  • Step #3 In a separate bowl, whisk together buttermilk, eggs, & melted butter.
  • Step #4 Make a well in the center of the dry ingredients, pour liquid ingredients into well, & stir this to mix.
  • Step #5 Fold in berries.
  • Step #6 Fill each muffin c 2/3 full with batter & sprinkle tops with pearl sugar if you like.
  • Step #7 Bake until golden on top, about 25 mins.
  • Step #8 Transfer tin to a rack & let cool 10 mins before removing muffins.
  • Step #9 Note: Nutritional analysis is per muffin.
