Pear And Walnut Muffins Recipe

Ingredients
  •  Cooking spray
  • 1 1/2 tsps baking powder
  • 1 c all-purpose flour (about 4 1/2 oz)
  • 2/3 c packed brown sugar
  • 1/2 c sliced walnuts
  • 1 large egg
  • 2 tbsps canola oil
  • 1 (8-oz) carton plain fat-free yogurt
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 c finely sliced peeled pear
  • 2 tsps vanilla extract
  • 1/3 c whole wheat flour (about 1 1/2 oz)
  • 3 tbsps turbinado sugar

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Place walnuts in a food processor/blender; process until finely ground.
  • Step #3 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #4 Combine flours & next 3 ingredients (through salt) in a medium bowl; stir well with a whisk.
  • Step #5 Stir in ground walnuts.
  • Step #6 Make a well in center of mixture.
  • Step #7 Combine brown sugar & the next 4 ingredients (through egg) in a small bowl; add to the flour mixture, stirring just until moist.
  • Step #8 Fold in sliced pear.
  • Step #9 Spoon batter into 15 muffin c coated with cooking spray; sprinkle batter with turbinado sugar.
  • Step #10 Bake at 400° for 20 mins or until muffins spring back when touched lightly in center.
  • Step #11 Remove from pans as soon as possible.
  • Step #12 Place on a wire rack.
  • Step #13 Serve either warm or at about room temp.
