Brie Strata With Apricot-papaya Salsa Recipe

Ingredients
  • 3 egg whites, lightly beaten
  • 1 tbsp fresh lime juice
  • 2 c sliced peeled papaya
  • 2 eggs, lightly beaten
  •  Vegetable cooking spray
  • 1 tbsp honey
  • 2 tbsps brown sugar
  • 1/4 tsp salt
  • 1 (12-oz) can evaporated skimmed milk
  • 1 c apricot nectar
  • 8 c (1-inch) cubes French bread
  • 3/4 c dried apricots, quartered
  • 1 (15-oz) round Brie

Directions
  • Step #1 Combine the nectar & apricots in a microwave-safe bowl.
  • Step #2 Microwave at high 2 mins or until mixture boils; cover & let this stand 30 mins or until apricots soften.
  • Step #3 Drain apricots, reserving 2 tbsps nectar; discard remaining nectar.
  • Step #4 Combine apricots, & lime juice; stir carefully, honey, papaya, reserved nectar, & set salsa aside.
  • Step #5 Remove rind from Brie, & discard.
  • Step #6 Cut Brie into small pieces.
  • Step #7 Arrange half of bread cubes in the bottom of a 9-inch square baking dish coated with cooking spray.
  • Step #8 Top with half of Brie, & sprinkle with half of brown sugar.
  • Step #9 Repeat procedure with remaining bread, Brie, & brown sugar.
  • Step #10 Preheat oven to 350°.
  • Step #11 Combine milk, salt, egg whites, & eggs; stir well.
  • Step #12 Pour over bread; press firmly with back of spoon to moisten all bread cubes.
  • Step #13 Cover up; chill 30 mins.
  • Step #14 Bake at 350° for 35 mins or until a knife inserted near center comes out clean.
  • Step #15 Serve warm with salsa.
