Smoked-salmon, Goat-cheese, And Fresh-dill Frittata Recipe

Ingredients
  • 1 tbsp sliced fresh dill
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 c (2 oz) crumbled goat cheese
  • 3 oz thinly sliced smoked salmon, cut into 1/4-inch-wide strips
  • 2 1/2 c shredded peeled baking potato or put in the fridged shredded hash brown potatoes
  •  Cooking spray
  • 1/4 tsp pepper
  • 6 large egg whites

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #3 Add potato; sauté 5 mins or until golden brown, & sprinkle with salt & pepper.
  • Step #4 Combine the egg whites, eggs, & smoked salmon in a medium bowl, goat cheese, & stir well with a whisk.
  • Step #5 Spread the egg mixture evenly over the potato in skillet, & cook 2 mins or until edges are set & bottom is lightly browned.
  • Step #6 Sprinkle top the top this with dill.
  • Step #7 Bake at 350° for 5 mins.
  • Step #8 Broil 3 mins or until center is set.
  • Step #9 Carefully loosen frittata from skillet with a spatula; carefully slide frittata onto a platter.
  • Step #10 Cut into 4 wedges.
