Crawfish Alfredo With Herbed Biscuits Recipe

Ingredients
  • 1 (16-oz) package frozen crawfish tails, thawed & undrained
  • 2 green onions, finely sliced
  • 2 c self-rising flour
  •  Garnishes: fresh chives, shaved Romano cheese
  • 1/2 c dry white wine
  • 1/3 c butter, cut into pieces
  • 3/4 c buttermilk
  • 1 (5.25-oz) package buttery garlic & herb spreadable cheese
  • 1 (16-oz) jar Alfredo sauce
  • 1 tsp Creole or seafood seasoning
  • 1/3 c freshly grated Parmesan cheese
  • 1 1/2 tbsps sliced fresh chives

Directions
  • Step #1 Cut butter into flour with a pastry mixer until crumbly; add Parmesan cheese & chives.
  • Step #2 Add buttermilk, stirring until dry ingredients are moistened.
  • Step #3 Turn dough out onto a lightly floured surface; knead 3 or 4 times.
  • Step #4 Pat or roll dough to 3/4-inch thickness; cut with a 3-inch round cutter, & place on a lightly greased baking sheet.
  • Step #5 Bake at 425º for 12 mins or until golden.
  • Step #6 Set biscuits aside, & keep warm.
  • Step #7 Combine wine & green onions In a large-ish nonstick skillet; bring to a boil.
  • Step #8 Reduce heat to medium, & cook 6 mins or until wine is reduced by half.
  • Step #9 Add spreadable cheese; reduce heat, & whisk until cheese melts.
  • Step #10 Stir in Alfredo sauce.
  • Step #11 Add crawfish meat with liquid & Creole seasoning; cook over medium-low heat until thoroughly heated.
  • Step #12 Split warm biscuits in half horizontally.
  • Step #13 Spoon half of crawfish mixture evenly over bottom biscuit halves; top this with remaining biscuit halves.
  • Step #14 Spoon remaining crawfish mixture evenly over the top of each biscuit.
  • Step #15 Garnish, if desired.
