Baked Cheese Grits Recipe

Ingredients
  • 1/8 to 1/4 tsp ground red pepper
  • 1/2 (8-oz) block Monterey Jack cheese, shredded (about 1 c)
  • 1 tsp Worcestershire sauce (optional)
  • 1 tsp hot sauce
  • 1/4 c whipping cream
  • 1/2 (8-oz) block extra-sharp Cheddar cheese, shredded (about 1 c)
  • 3 large eggs, lightly beaten
  • 1 1/4 c uncooked quick-cooking grits*
  • 1/4 tsp ground black pepper
  • 5 c chicken broth

Directions
  • Step #1 Bring chicken broth to a boil in a medium saucepan over medium-high heat.
  • Step #2 Gradually whisk in grits; bring to a boil.
  • Step #3 Reduce heat to medium-low, stirring every once in awhile, & let simmer, 10 mins or until thickened.
  • Step #4 Stir in Cheddar cheese, if desired, and, next 5 ingredients, Worcestershire sauce, stirring until cheese melts.
  • Step #5 Remove from heat, & stir in the eggs.
  • Step #6 Pour grits into a lightly greased 2-quart or 11- x 8-inch baking dish.
  • Step #7 Bake, uncovered, at 350º for 40 to 45 mins or until golden & set.
  • Step #8 *Stone-ground grits may be substituted.
  • Step #9 Increase liquid to 6 c, & increase cook time to 50 mins.
  • Step #10 Note: For testing purposes only, we used White Lily Quick Grits.
