Coconut Cream Cake Recipe

Ingredients
  • 1 c heavy whipping cream
  • 3 eggs
  • 1 (14 oz) can sweetened condensed milk
  • 1 tbsp white sugar
  • 1/3 c vegetable oil
  • 1 c flaked coconut
  • 1 (18.25 oz) package white cake mix
  • 1 (14 oz) can coconut cream
  • 1 c water
  • 1/2 tsp coconut extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 9x13 inch pan.
  • Step #3 In a large bowl, oil, eggs, mix together cake mix, water & coconut flavoring.
  • Step #4 Beat for 2 mins & pour this into 9x13 inch pan.
  • Step #5 Bake for 30 mins, or until a toothpick inserted into the cake comes out clean.
  • Step #6 In a medium bowl, mix coconut cream with sweetened condensed milk & stir until smooth.
  • Step #7 When cake comes out of the oven, poke holes into it in even rows using a large fork or chopsticks.
  • Step #8 Pour milk mixture over, allowing it to soak into the cake.
  • Step #9 Refrigerate for several hrs or overnight.
  • Step #10 In a large bowl, whisk cream until soft peaks form.
  • Step #11 Add sugar & continue whipping until stiff.
  • Step #12 Spread over cooled cake.
  • Step #13 Sprinkle top top this with flaked coconut.
