Welsh Rarebit Recipe

Ingredients
  • 1 1/2 tbsps dry mustard
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 3/4 c light or dark beer
  •  Tomato slices (optional)
  • 3 tbsps all-purpose flour
  • 6 English muffins, buttered & toasted
  • 1 tsp Worchestershire sauce
  • 3 tbsps butter or margarine
  • 3 c (12 oz) shredded sharp Cheddar cheese
  • 1 tsp paprika

Directions
  • Step #1 Melt butter in a saucepan over low heat/flame; add flour, whisking until smooth.
  • Step #2 Cook, whisking constantly, 2 to 3 mins.
  • Step #3 Whisk in beer; cook, whisking constantly, 3 mins.
  • Step #4 Stir in cheese & next 5 ingredients.
  • Step #5 Cook 3 to 4 mins or just until cheese melts.
  • Step #6 Spoon over English muffins.
  • Step #7 Broil 5 1/2 inches from heat 30 seconds or until browned.
  • Step #8 Serve with tomato slices, if desired.
  • Step #9 Note: For testing purposes only, we used Sierra Nevada Pale Ale.
