Apple-glazed Dessert Pancake Recipe

Ingredients
  • 1 c all-purpose flour
  • 2 c 1% low-fat milk, divided
  • 1/4 tsp ground nutmeg
  • 3 c sliced Rome apple (about 1 lb)
  • 2 tsps vanilla extract
  • 2 large egg whites
  • 1 tbsp powdered sugar
  • 2 large eggs
  • 1/4 tsp salt
  • 3/4 tsp ground cinnamon
  •  Cooking spray
  • 1 tsp cornstarch
  • 1/2 c apple juice
  • 1/4 c water
  • 1/3 c sugar
  • 1 tbsp brown sugar
  • 1 tbsp margarine

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Melt margarine in a 10-inch cast-iron skillet over medium-high heat.
  • Step #3 Add apple; sauté 3 mins.
  • Step #4 Stir in brown sugar, cinnamon, & nutmeg; cook 2 mins.
  • Step #5 Combine juice, water, & cornstarch in a small bowl.
  • Step #6 Stir well; add to skillet.
  • Step #7 Bring to a boil; cook 1 min or until thick, stirring carefully.
  • Step #8 Remove apple mixture from skillet; set aside, & keep warm.
  • Step #9 Wipe skillet clean with a paper towel.
  • Step #10 Place skillet in oven for 5 mins.
  • Step #11 Combine flour & 1 c milk In a large-ish bowl; stir well with a whisk.
  • Step #12 Stir in 1 c milk, vanilla, & next 4 ingredients (vanilla through egg whites); set aside.
  • Step #13 Coat skillet with cooking spray; pour batter into preheated skillet.
  • Step #14 Bake at 425° for 25 mins or until puffy & brown around edges.
  • Step #15 Remove from oven; sprinkle with powdered sugar.
  • Step #16 Cut into wedges; top this with apple mixture.
  • Step #17 Serve as soon as possible.
