Eggs Florentine Recipe

Ingredients
  • 6 English muffins, split & toasted
  • 6 large eggs
  • 3 (10-oz) packages frozen sliced spinach, thawed, drained, & squeezed dry
  • 2 c 1% low-fat milk
  • 1/8 tsp ground red pepper
  • 1/3 c (1 1/2 oz) grated fresh Parmesan cheese
  •  Cooking spray
  • 1/4 tsp salt
  • 1/4 tsp coarse ground black pepper
  • 3 tbsps all-purpose flour
  • 1/4 tsp paprika

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Press spinach into the bottom of a 13 x 9-inch baking dish coated with cooking spray.
  • Step #3 Form 6 (3-inch) indentations in spinach layer using the back of a spoon or bottom of a large custard c.
  • Step #4 Break an egg into each indentation.
  • Step #5 Combine flour, salt, & red pepper in a medium saucepan.
  • Step #6 Gradually add the milk, stirring with a whisk until mixed.
  • Step #7 Place milk mixture over med-heat/flame, & cook this until thick (about 8 mins), stirring constantly.
  • Step #8 Remove from heat; add cheese, stirring until cheese melts.
  • Step #9 Pour cheese sauce over eggs & spinach; sprinkle with paprika.
  • Step #10 Bake at 350° for 25 mins or until egg yolks are almost set.
  • Step #11 Cut spinach-egg mixture into 6 portions; serve each portion over 2 English muffin halves, & sprinkle with black pepper.
