Peanut Butter Muffins Recipe

Ingredients
  • 1 egg, beaten
  • 2 tbsps baking powder
  • 3 tbsps unsalted butter, melted
  • 1/3 c peanut butter (crunchy or smooth
  • 1 c whole milk
  • 1/3 c unsalted peanuts, sliced
  • 1/4 c sugar
  • 1/2 tsp salt
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 350° F.
  • Step #2 Combine the flour, sugar, baking powder, & salt In a large-ish mixing bowl.
  • Step #3 Add the peanut butter & mix with a pastry cutter or 2 forks until it has reached a coarse, crumbly texture.
  • Step #4 Stir in the milk, egg, & butter.
  • Step #5 Coat a nonstick muffin pan with cooking spray.
  • Step #6 Fill each muffin c about ¾ full with batter.
  • Step #7 Evenly sprinkle some sliced peanuts over each.
  • Step #8 Bake 15 to 20 mins or until light golden brown.
  • Step #9 Cool on a wire rack.
