Lightly sweetened whipped crème fraîche (optional; see notes)
1 c polenta
2 tbsps sugar
1/2 tsp salt
Directions
Step #1 In a 2 1/2- to 3-quart pan over high heat, bring 3 c water & the milk to a boil.
Step #2 Reduce heat so liquid is barely boiling.
Step #3 Stirring constantly, steady stream, pour in polenta in a thin, pausing every once in awhile to break up any lumps.
Step #4 Stir in sugar & salt.
Step #5 Simmer, stirring often, 20 to 40 mins (if heat is too high, until polenta is soft & creamy to bite, bubbles may "spit" globs of hot polenta out of the pan).
Step #6 Ladle polenta into bowls & top each serving with about 1 tbsp blackberry jam & a dollop of crème fraîche.
