Creamy Breakfast Polenta Recipe

Ingredients
  • 4 to 6 tbsps blackberry jam (see notes)
  • 3 c low-fat (2%) milk
  •  Lightly sweetened whipped crème fraîche (optional; see notes)
  • 1 c polenta
  • 2 tbsps sugar
  • 1/2 tsp salt

Directions
  • Step #1 In a 2 1/2- to 3-quart pan over high heat, bring 3 c water & the milk to a boil.
  • Step #2 Reduce heat so liquid is barely boiling.
  • Step #3 Stirring constantly, steady stream, pour in polenta in a thin, pausing every once in awhile to break up any lumps.
  • Step #4 Stir in sugar & salt.
  • Step #5 Simmer, stirring often, 20 to 40 mins (if heat is too high, until polenta is soft & creamy to bite, bubbles may "spit" globs of hot polenta out of the pan).
  • Step #6 Ladle polenta into bowls & top each serving with about 1 tbsp blackberry jam & a dollop of crème fraîche.
