Basil-potato Frittata Recipe

Ingredients
  • 3 eggs, lightly beaten
  • 1 tbsp balsamic vinegar
  • 1/2 c thinly sliced onion, separated into rings
  • 1/2 tsp hot sauce
  • 1 tbsp sliced fresh basil
  • 1/2 tsp salt
  • 1/4 c (1/2 oz) finely grated fresh Parmesan cheese, divided
  • 4 egg whites, lightly beaten
  • 2 c sliced baking potato (about 1 large)
  •  Vegetable cooking spray
  • 2 tbsps water

Directions
  • Step #1 Place the sliced potato in a medium saucepan; cover with water, & bring to a boil.
  • Step #2 Cook 7 mins or until tender.
  • Step #3 Drain & let cool.
  • Step #4 Coat a large nonstick skillet with cooking spray; place over med-heat/flame until hot.
  • Step #5 Add onion; sauté 6 mins or until tender.
  • Step #6 Remove from heat, & set aside.
  • Step #7 Combine 3 tbsps of cheese, basil, & the next 5 ingredients (basil through eggs) in a medium bowl; stir in the potato & onion.
  • Step #8 Wipe skillet with paper towels, & recoat with cooking spray.
  • Step #9 Place skillet over med-heat/flame until hot.
  • Step #10 Add egg mixture, & cook 6 mins or until almost set.
  • Step #11 Wrap handle of skillet with foil wrap, & broil 1 1/2 mins.
  • Step #12 Top with remaining cheese, & broil for 30 seconds or until cheese melts.
  • Step #13 Drizzle vinegar over the frittata, & cut into 4 wedges.
  • Step #14 Serve warm.
