Bananas Foster Upside-down Coffee Cake Recipe

Ingredients

1/2 c butter, softened & divided
Whipped cream (optional)
1 tsp vanilla extract
1 c firmly packed light brown sugar
2 c all-purpose baking mix
2 large eggs, separated
7 maraschino cherries
1/2 c sliced pecans, toasted
2 tbsps rum
3/4 c granulated sugar, divided
2 medium-size ripe bananas
1/2 c sour cream
3/4 c milk
1/4 tsp ground cinnamon

Directions

Step #1 Melt 1/4 c butter in a 10-inch cast-iron skillet over low heat/flame; stir in the rum.
Step #2 Sprinkle top brown sugar evenly over butter mixture.
Step #3 Remove from heat.
Step #4 Sprinkle top pecans evenly over brown sugar mixture.
Step #5 Cut bananas in half crosswise; cut each half lengthwise into 3 slices.
Step #6 Arrange banana slices in a spoke pattern over pecans.
Step #7 Cut 6 cherries in half.
Step #8 Place 1 cherry half between each banana slice.
Step #9 Place remaining whole cherry in center of skillet.
Step #10 Beat remaining 1/4 c butter & 1/2 c granulated sugar In a large-ish bowl at medium speed with an electric mixer until mixed.
Step #11 Add egg yolks, 1 at a time, beating just until mixed after each addition.
Step #12 Add milk, & vanilla, sour cream, beating just until mixed.
Step #13 Combine baking mix & cinnamon.
Step #14 Add cinnamon mixture to milk mixture, beating just until mixed.
Step #15 Beat egg whites In a large-ish bowl with an electric mixer until soft peaks form.
Step #16 Gradually beat in remaining 1/4 c granulated sugar until stiff peaks form.
Step #17 Fold into batter.
Step #18 Spread batter evenly over bananas in skillet.
Step #19 Bake at 350° for 45 to 50 mins or until a wooden pick inserted in center comes out clean.
Step #20 Cool in skillet on wire rack 10 mins.
Step #21 Invert cake onto a serving plate.
Step #22 Serve warm with whipped cream, if desired.
Step #23 Note: For testing purposes only, we used Bisquick All-Purpose Baking Mix.
