Wheat Germ Pancakes Recipe

Ingredients
  • 2 c low-fat buttermilk
  • 2 large egg whites
  • 1 tsp baking soda
  •  Cooking spray
  • 1/2 c toasted or honey-crunch wheat germ
  • 1/4 tsp salt
  • 1 1/4 c all-purpose flour
  • 2 tsps sugar
  • 1/4 c whole-wheat flour

Directions
  • Step #1 Lightly spoon flours into dry measuring c, & level with a knife.
  • Step #2 Combine flours & the next 4 ingredients (flours through salt) In a large-ish bowl.
  • Step #3 Combine buttermilk & egg whites; add to flour mixture, stirring until smooth.
  • Step #4 Spoon about 1/4 c batter per pancake onto a hot nonstick griddle or a large nonstick skillet coated with cooking spray.
  • Step #5 Turn the pancakes when tops are covered with bubbles & edges look cooked; cook for 1 to 2 mins more or until golden.
  • Step #6 Note: To freeze, cool the cooked pancakes completely on a wire rack.
  • Step #7 Place in a heavy-duty zip-top plastic bag, separating the pancakes with wax paper.
  • Step #8 To reheat, microwave pancakes at high for 45 seconds, or place this in the toaster at medium-high heat for 2 cycles or until hot.
