Sugar-crusted Raspberry Muffins Recipe

Ingredients
  • 1/4 tsp vanilla extract
  • 1/2 c (1 stick) unsalted butter, melted
  • 3/4 c whole milk
  • 1/4 tsp salt
  • 2 tsps baking powder
  • 1 1/2 c fresh raspberries
  • 2 c all-purpose flour
  • 1 large egg
  • 3/4 c sugar

Directions
  • Step #1 Heat oven to 400F ° F.
  • Step #2 Line a 12-c muffin tin with paper liners, or coat it with cooking spray, vegetable oil, or butter.
  • Step #3 In a medium bowl, 1/2 c of the sugar, mix 1 3/4 c of the flour, the baking powder, & salt.
  • Step #4 Add the butter & mix.
  • Step #5 In a second bowl, whisk together the milk, egg, & vanilla.
  • Step #6 Gradually add the milk mixture to the flour mixture & stir until just mixd; the batter will be lumpy.
  • Step #7 Toss the berries with the remaining flour in a bowl.
  • Step #8 Gently fold the berry mixture into the batter.
  • Step #9 Fill each muffin c 3/4 full.
  • Step #10 Sprinkle top the batter with the remaining sugar.
  • Step #11 Bake for 17 to 20 mins or until a toothpick inserted into the center of a muffin comes out clean.
  • Step #12 Transfer pan to a wire rack to cool for 10 mins.
  • Step #13 Serve warm.
  • Step #14 Tip: Try this muffin recipe with blackberries or blueberries instead of raspberries.
  • Step #15 Or use a combination of all three.
