Blt Breakfast Sandwiches Recipe

Ingredients
  • 2 tbsps sliced fresh chives
  • 4 lettuce leaves
  • 1 tbsp butter or margarine
  • 2 small tomatoes, sliced
  • 2 (3-oz) packages cream cheese, softened
  • 6 bacon slices, cooked & crumbled
  • 4 sourdough bread slices, toasted
  • 4 large eggs
  • 3/4 tsp seasoned pepper, divided
  • 1 (0.9-oz) envelope hollandaise sauce mix

Directions
  • Step #1 Prepare hollandaise sauce according to package directions; keep warm.
  • Step #2 Stir together bacon, chives, cream cheese, & 1/4 tsp seasoned pepper; spread evenly on one side of each toasted bread slice.
  • Step #3 Melt butter In a large-ish nonstick skillet over med-heat/flame.
  • Step #4 Gently break eggs into hot skillet, & sprinkle evenly with 1/4 tsp seasoned pepper.
  • Step #5 Cook 2 to 3 mins on each side or until done.
  • Step #6 Place lettuce leaves & tomatoes on top of bread slices, & top this with fried eggs.
  • Step #7 Drizzle hollandaise sauce evenly over top, & sprinkle evenly with remaining 1/4 tsp seasoned pepper.
  • Step #8 Serve as soon as possible.
