Confetti Omelet Casserole Recipe

Ingredients
  • 1 (4-oz) jar sliced pimiento, drained
  •  Garnish: fresh flat-leaf parsley sprigs
  • 2 tbsps sliced fresh parsley
  • 1 c fat-free milk
  •  Vegetable cooking spray
  • 4 c egg substitute
  • 2 c (8 oz) 2% reduced-fat shredded sharp Cheddar cheese
  • 1/2 tsp salt
  • 1/2 c sliced onion
  • 6 bacon slices

Directions
  • Step #1 Cook bacon in a medium skillet until crisp; remove bacon, & drain on paper towels, reserving 1 tsp drippings in skillet.
  • Step #2 Crumble bacon, & set aside.
  • Step #3 Add 1/2 c sliced onion to hot drippings in skillet, & sauté over med-heat/flame 3 to 4 mins or until tender.
  • Step #4 Stir together crumbled bacon, onion, egg substitute, & next 5 ingredients In a large-ish bowl.
  • Step #5 Pour egg mixture into a 13- x 9-inch baking dish coated with cooking spray.
  • Step #6 Bake at 325° for 45 mins or until set.
  • Step #7 Let stand 5 mins before serving.
  • Step #8 Garnish, if desired.
