Coconut Pancakes With Orange-mango Compote Recipe

Ingredients
  •  Pancakes:
  • 1 c water
  • 1 1/2 tsps granulated sugar
  • 1/3 c coconut flour or all-purpose flour (about 1 oz)
  • 1/4 c fat-free milk
  • 1 c sliced peeled mango (about 1 medium)
  • 1 1/2 tsps fresh lime juice
  • 1 tbsp water
  • 1 tsp grated orange rind
  • 1/4 tsp ground cinnamon
  • 1/3 c sliced orange sections
  • 1 c light coconut milk
  • 1 tbsp cornstarch
  • 1 1/2 c sliced, peeled, cored red apple (about 1 medium)
  • 1/4 tsp salt
  • 2 tbsps light brown sugar
  • 1 large egg
  • 3/4 c all-purpose flour (about 3 1/3 oz)
  •  Compote:
  • 1 tbsp canola oil
  • 1 1/2 tsps baking powder

Directions
  • Step #1 To prepare compote, mix first 7 ingredients In a large-ish saucepan; bring to a boil.
  • Step #2 Cover up, reduce heat, & cook 8 mins or until fruit is tender.
  • Step #3 Combine cornstarch, & lime juice in a small bowl, 1 tbsp water, stirring with a whisk; stir in theto fruit mixture; bring to a boil.
  • Step #4 Cook 1 min or until slightly thickened, stirring constantly.
  • Step #5 Remove from heat.
  • Step #6 To prepare pancakes, lightly spoon flours into dry measuring c, & level with a knife.
  • Step #7 Combine flours, baking powder, granulated sugar, & salt In a large-ish bowl.
  • Step #8 Combine coconut milk, oil, fat-free milk, & egg in a small bowl, stirring with a whisk.
  • Step #9 Add milk mixture to flour mixture, stirring with a whisk (batter will be thick).
  • Step #10 Pour about 1/4 c batter per pancake onto a hot nonstick griddle or nonstick skillet; spread carefully with a spatula.
  • Step #11 Cook 2 mins or until tops are covered with bubbles & edges looked cooked.
  • Step #12 Carefully turn pancakes over; cook for 2 mins or until bottoms are lightly browned.
  • Step #13 Serve with the compote.
