Sweet-crunch Muffins Recipe

Ingredients
  • 2 tsps baking powder
  • 1 c whole-wheat flour
  •  About 1/2 c salad oil
  • 1 c buttermilk
  • 1/2 tsp baking soda
  • 1 c regular rolled oats
  • 1/2 c pitted dates, sliced
  • 1/2 c sliced pecans
  • 2 large egg whites
  • 1/2 c firmly packed brown sugar

Directions
  • Step #1 In a large bowl, 1/2 c salad oil, sugar, buttermilk, mix oats, & egg whites.
  • Step #2 In another bowl, baking soda, baking powder, mix flour, dates, & pecans.
  • Step #3 Add flour mixture to buttermilk mixture; stir just until evenly moistened.
  • Step #4 Equally fill 12 to 15 oiled or paper-lined muffin c (2 3/4 in.
  • Step #5 wide) with batter.
  • Step #6 Bake in a 375° oven until well browned, 20 to 25 mins (15 to 20 mins in a convection oven).
  • Step #7 Cool in pans for 5 mins.
  • Step #8 Invert to remove muffins.
  • Step #9 Serve warm or cool.
