Dried-cherry Streusel Kuchen Recipe

Ingredients
  • 2/3 c low-fat buttermilk
  • 1 1/2 tsps baking powder
  • 1/4 tsp almond extract
  • 1/3 c egg substitute
  • 1/4 c all-purpose flour
  • 1 tbsp amaretto (almond-flavored liqueur) or water
  • 3 tbsps brown sugar
  • 2 1/2 tbsps vanilla extract
  • 1 2/3 c all-purpose flour
  • 3/4 c dried tart red cherries
  • 1 1/2 tbsps chilled stick margarine or butter
  • 3 tbsps vegetable oil
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon
  •  Cooking spray
  • 1/4 c granulated sugar
  • 1 tsp grated lemon rind
  • 1/4 c packed brown sugar
  • 1/4 tsp salt

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon 1/4 c flour into a dry measuring c; level with a knife.
  • Step #3 Combine with 1/4 c brown sugar & cinnamon in a bowl; cut in margarine with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #4 Set streusel mixture aside.
  • Step #5 Lightly spoon 1 2/3 c flour into dry measuring c, & level with a knife.
  • Step #6 Combine with granulated sugar & next 4 ingredients (granulated sugar through salt) In a large-ish bowl.
  • Step #7 Combine buttermilk & next 6 ingredients (buttermilk through almond extract), & stir with a whisk.
  • Step #8 Add the buttermilk mixture to the flour mixture, stirring until mixed.
  • Step #9 Gently fold in dried cherries.
  • Step #10 Spoon batter into a 9-inch round cake pan coated with cooking spray.
  • Step #11 Sprinkle top streusel mixture evenly over top.
  • Step #12 Bake at 375° for 30 mins or until a wooden pick inserted in center comes out clean.
  • Step #13 Cool on a wire rack.
