Lumberjack Hash Recipe

Ingredients
  • 8 c frozen shredded hash brown potatoes, thawed (about 1 lb)
  • 4 oz 33%-less-sodium ham, sliced
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 3/4 c (3 oz) reduced-fat shredded cheddar cheese
  • 1 c sliced onion
  • 2 tsps vegetable oil
  • 2 garlic cloves, minced
  • 2 tsps butter
  • 1 c sliced green bell pepper

Directions
  • Step #1 Heat oil & butter In a large-ish nonstick skillet over med-heat/flame.
  • Step #2 Add onion; cook 5 mins.
  • Step #3 Add bell pepper & garlic; cook 3 mins.
  • Step #4 Add potatoes, & ham; cook 16 mins or until potatoes are golden brown, salt, pepper, stirring every once in awhile.
  • Step #5 Top with cheese; cook 2 mins or until cheese melts.
