Apple Blintz Pancakes Recipe

Ingredients
  • 1 c pancake mix
  • 1 tbsp vegetable oil
  • 1 egg
  • 1/4 c cottage cheese
  • 2 tsps ground cinnamon (optional)
  • 3/4 c sour cream
  • 1 c applesauce
  • 1 c whole milk

Directions
  • Step #1 Place the pancake mix In a large-ish bowl.
  • Step #2 In another bowl, cottage cheese, oil, whisk together the egg, milk, & ¼ c of the sour cream.
  • Step #3 Stir the wet ingredients into the pancake mix & whisk just to mix.
  • Step #4 Let the batter rest according to the pancake-mix label directions (or for 5 mins if you make your own mix).
  • Step #5 Place a nonstick griddle or skillet coated with oil, butter, or cooking spray over medium-high heat.
  • Step #6 Spoon or pour about 1/3 c of batter for each pancake onto the griddle.
  • Step #7 Turn when bubbles rise to the surface & the edges look cooked.
  • Step #8 Repeat with the remaining batter.
  • Step #9 Before serving, spoon 1 tbsp of the applesauce onto one half of each pancake; fold in half & top this with some of the remaining sour cream.
  • Step #10 Sprinkle top with cinnamon (if desired).
