The Big Easy Crawfish Omelet Recipe

Ingredients
  • 1 tbsp sliced fresh chives
  • 1 tbsp All That Jazz Spice uping
  • 4 large egg whites
  • 1/4 tsp hot sauce
  • 1/4 c finely sliced reduced-fat ham (1 1/2 oz)
  • 2 large eggs
  •  Cooking spray
  • 1 tbsp water
  • 1 tsp fat-free sour cream
  • 1/4 c cooked crawfish tail meat, sliced
  • 2 tbsps shredded light processed cheese (such as Velveeta Light)
  • 1/3 c sliced mushrooms

Directions
  • Step #1 Combine first 5 ingredients, stirring with a whisk.
  • Step #2 Combine crawfish, All That Jazz Spice uping, & sour cream.
  • Step #3 Heat a small nonstick skillet coated with cooking spray over medium-high heat.
  • Step #4 Add mushrooms & ham; sauté 3 mins.
  • Step #5 Pour egg mixture into pan; let egg mixture set slightly.
  • Step #6 Tilt pan & carefully lift edges of omelet with a spatula; allow uncooked portion to flow underneath cooked portion.
  • Step #7 Cook 3 mins; flip omelet.
  • Step #8 Spoon crawfish mixture onto half of omelet.
  • Step #9 Carefully loosen omelet with a spatula; fold in half.
  • Step #10 Gently slide omelet onto a plate; top this with cheese.
  • Step #11 Cut omelet in half.
