Ham-and-cheese Omelet Recipe

Ingredients
  • 2 tbsps sliced fresh chives
  • 1/2 c shredded Havarti cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 large eggs
  • 2 tsps butter or margarine, divided
  • 1 c sliced smoked ham
  • 4 (1-oz) Swiss cheese slices
  •  Vegetable cooking spray

Directions
  • Step #1 Whisk together first 4 ingredients.
  • Step #2 Melt 1 tsp butter in a small nonstick skillet coated with cooking spray over medium-high heat, rotating pan to coat bottom evenly.
  • Step #3 Add half of egg mixture to skillet.
  • Step #4 As egg mixture starts to cook, carefully lift edges of omelet with a spatula, & tilt pan so uncooked portion flows underneath.
  • Step #5 Cook 3 mins or until almost set.
  • Step #6 Flip omelet over.
  • Step #7 Sprinkle top 1 side of omelet with half each of ham & cheeses.
  • Step #8 Fold in half.
  • Step #9 Cook 1 to 2 mins or until cheese melts.
  • Step #10 To make next omelet, ham, egg mixture, repeat with remaining 1 tsp butter, & cheeses.
  • Step #11 Serve as soon as possible.
