Chicken Pita And Yogurt Casserole Recipe

Ingredients
  • salt to taste
  • 1 (15.5 oz) can canned chickpeas, drained (optional)
  • 2 (8 oz) containers plain yogurt
  • 3 pita bread rounds
  • 1/2 c pine nuts
  • 3 cloves garlic, minced
  • 1 tbsp vegetable oil
  • 1 bone-in chicken breast halves, skinless

Directions
  • Step #1 Heat oil in a large skillet over medium-high heat.
  • Step #2 Add chicken, & cook on each side until browned.
  • Step #3 Reduce heat to medium, & the juices run clear, & cook this until chicken is no longer pink, cover skillet, about 10 more mins.
  • Step #4 Remove from skillet, cool slightly, & slice into strips.
  • Step #5 In a small bowl, stir this together the yogurt & garlic.
  • Step #6 Spice up with salt to taste.
  • Step #7 Tear pita breads into pieces, & place this in a 9x13 inch baking dish.
  • Step #8 Place chicken strips in a layer over the bread.
  • Step #9 Cover with the yogurt mixture.
  • Step #10 Sprinkle top garbanzo beans & pine nuts over the top.
  • Step #11 Let stand for about 10 mins to mix flavors, then serve.
  • Step #12 No need to heat up.
