Blueberry-lemon Coffee Cake Recipe

Ingredients
  • 1/4 c sugar
  • 1 1/2 c blueberries
  •  Cake:
  • 1/2 tsp salt
  • 2 tbsps chilled butter, cut into small pieces
  • 2 tsps baking powder
  •  Cooking spray
  • 3 tbsps sliced almonds, sliced
  • 1 1/2 tbsps butter, melted
  • 1 1/2 c all-purpose flour
  • 1/2 c sugar
  • 1 tbsp lemon juice
  • 1 large egg
  • 2 tsps grated lemon rind
  • 3/4 c fat-free milk
  • 1/3 c almond paste
  • 1/4 tsp baking soda
  •  Topping:
  • 1/2 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 To prepare cake, lightly spoon flour into dry measuring c, & level with a knife.
  • Step #3 Combine flour, & salt in a small bowl, baking powder, baking soda, stirring with a whisk.
  • Step #4 Place 1/2 c sugar, almond paste, & 2 tbsps butter In a large-ish bowl; beat with a mixer at medium speed until well mixed.
  • Step #5 Add egg & lemon juice, beating well.
  • Step #6 Add flour mixture & fat-free milk alternately to sugar mixture, beginning & ending with flour mixture.
  • Step #7 Fold in blueberries & rind.
  • Step #8 Spoon batter into a 9-inch square baking pan coated with cooking spray.
  • Step #9 To prepare topping, mix 1/4 c sugar & remaining ingredients in a small bowl, tossing with a fork until moist.
  • Step #10 Sprinkle top topping evenly over batter.
  • Step #11 Bake at 350° for 35 mins or until a wooden pick inserted in center comes out clean.
  • Step #12 Cool in pan on a wire rack.
