Blueberry-almond Coffeecake Recipe

Ingredients
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 c granulated sugar
  • 1 c fresh blueberries, divided
  • 1 c all-purpose flour
  • 2 tbsps butter or stick margarine, melted
  • 2/3 c low-fat buttermilk
  • 3/4 tsp baking powder
  • 1 large egg
  • 1/4 c sliced almonds
  •  Cooking spray
  • 1/4 tsp almond extract
  • 1 tbsp brown sugar
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flour into a dry measuring c; level with a knife.
  • Step #3 Combine first 5 ingredients In a large-ish bowl; add 2/3 c blueberries, & toss well.
  • Step #4 Combine buttermilk, butter, extracts, & egg; stir well with a whisk.
  • Step #5 Add to flour mixture, stirring just until flour mixture is moist.
  • Step #6 Spoon batter into an 8-inch square baking pan coated with cooking spray, spreading evenly.
  • Step #7 Top with 1/3 c blueberries.
  • Step #8 Combine almonds, brown sugar, & cinnamon, & sprinkle it over blueberries.
  • Step #9 Bake at 350° for 35 mins or until a wooden pick inserted in center comes out clean.
