Spinach-feta Bread Recipe

Ingredients
  • 1 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
  • 2 tbsps (1/2 oz) grated fresh Parmesan cheese
  • 1 (1-lb) loaf frozen white bread dough
  • 1 c (4 oz) crumbled feta cheese
  • 3 garlic cloves, minced
  • 1 large egg white
  •  Cooking spray
  • 1 (14-oz) can artichoke hearts, drained & sliced
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/3 c (3 oz) 1/3-less-fat cream cheese

Directions
  • Step #1 Thaw dough in refrigerator 12 hrs.
  • Step #2 Combine feta & next 7 ingredients (feta through egg white) in a bowl.
  • Step #3 Roll dough into a 16 x 10-inch rectangle on a lightly floured surface.
  • Step #4 Spread spinach mixture over dough, leaving a 1/2-inch border.
  • Step #5 Beginning with a long side, roll up jelly-roll fashion; pinch seam & ends to seal.
  • Step #6 Place roll, seam side down, on a baking sheet coated with cooking spray.
  • Step #7 Cut diagonal slits into top of the roll using a sharp knife.
  • Step #8 Cover up & let rise in a warm place (85°), 1 hr or until doubled in size.
  • Step #9 Preheat oven to 350°.
  • Step #10 Sprinkle top Parmesan cheese over the top of the roll.
  • Step #11 Bake at 350° for 45 mins or until golden.
