Banana-oat Quick Bread Recipe

Ingredients
  • 1/2 c low-fat buttermilk
  • 1/4 c egg substitute or 2 large egg whites
  • 1 c mashed ripe banana
  • 1/4 c vegetable oil
  • 2 tbsps brown sugar
  • 2 tsps butter or stick margarine
  • 1/4 c quick-cooking oats
  •  Cooking spray
  • 1 c quick-cooking oats
  • 3/4 c packed brown sugar
  • 2 1/2 tsps baking powder
  • 2 tbsps coarsely sliced walnuts
  • 1 1/2 c all-purpose flour
  • 1/4 tsp salt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #3 Combine flour & next 4 ingredients (flour through salt) In a large-ish bowl; make a well in center of mixture.
  • Step #4 Combine banana, oil, buttermilk, & egg substitute in a bowl; add to flour mixture.
  • Step #5 Stir just until moist.
  • Step #6 Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray.
  • Step #7 Combine 1/4 c oats, 2 tbsps brown sugar, walnuts, & butter, & sprinkle it over batter.
  • Step #8 Bake at 350° for 1 hr or until a wooden pick inserted in center comes out clean.
  • Step #9 Cool 5 mins in pan on a wire rack; remove this from pan.
  • Step #10 Cool completely on wire rack.
