Flaky Currant Scones Recipe

Ingredients
  • 1/2 c milk, plus more for brushing
  • 1/4 tsp salt
  • 4 tbsps cold unsalted butter, cut into small pieces
  • 1/2 c dried currants
  • 2 tbsps sugar
  • 1 large egg, lightly beaten
  • 2 tsps baking powder
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat the oven to 425°.
  • Step #2 In a large bowl, mix the flour with the sugar, baking powder & salt.
  • Step #3 Using a pastry mixer or 2 knives, cut in the butter until the mixture resembles coarse meal.
  • Step #4 Stir in the currants.
  • Step #5 Add the egg & 1/2 c of milk & stir with a fork just until the dough comes together.
  • Step #6 Do not overmix.
  • Step #7 Turn the dough out onto a lightly floured surface.
  • Step #8 Gently pat the dough into a 3/4-inch-thick slab.
  • Step #9 Using a 2-inch fluted biscuit cutter, cut out 12 rounds, rerolling the dough as needed.
  • Step #10 Lightly dust a baking sheet with flour.
  • Step #11 Transfer the scones to the sheet & lightly brush the tops with milk.
  • Step #12 Bake the scones for 15 mins, or until golden.
  • Step #13 Transfer to a rack to cool slightly.
  • Step #14 Serve warm or at about room temp.
  • Step #15 Make Ahead: The currant scones can be stored in an airtight container for up to 1 day.
